1 tablespoon olive oil

1 onion, finely chopped

1 garlic cloves, crushed

1 inch piece of ginger grated

1 carrot, diced

1 celery stick, diced

1 red chilli, de seeded and finely chopped (or 1 teaspoon chilli flakes)

150g (¾ cup) red lentils, rinsed

400g tin chopped tomatoes

1 tablespoon tomato purée

1 litre (4 cups) vegetable stock

1 apple coarsely chopped

Salt and freshly ground black pepper, to taste

Fresh coriander or parsley, chopped, to serve

Lemon wedges, to serve
