A Brief History of Spicy Chicken Wings
Spicy chicken wings, now a global favourite, have humble beginnings rooted in American culinary creativity. The iconic “Buffalo wing” was invented in 1964 at the Anchor Bar in Buffalo, New York. According to legend, co-owner Teressa Bellissimo whipped up a late-night snack for her son and his friends by deep-frying leftover chicken wings—then typically reserved for making stock—and tossing them in a spicy hot sauce and butter mixture. The wings were an instant hit, and soon became a bar staple, especially paired with celery sticks and blue cheese dressing.
From this origin, spicy wings took off, inspiring countless variations around the world. Chefs and home cooks alike have since experimented with different marinades, spices, and cooking techniques—adding everything from curry powders to fiery chili pastes. Today, spicy chicken wings can be found on menus everywhere, beloved for their bold flavours, crispy texture, and irresistible heat.
Whether enjoyed as a game-day snack, party food, or a flavourful meal, spicy chicken wings continue to bring people together in celebration of taste and tradition.

Frequently asked questions for Spicy Chicken Wings
Can I make these wings less spicy?
Absolutely! Simply reduce the amount of chili powder, cayenne pepper, and hot sauce in the recipe. You can also add a bit more honey or a splash of yogurt to mellow out the heat.
Can I use boneless chicken instead of wings?
Yes, boneless chicken thighs or breast pieces can be used. Just adjust the cooking time as smaller pieces may cook faster.
How do I get crispy chicken wings in the oven?
Pat the wings dry before marinating, use a wire rack to allow air circulation, and bake at a high temperature. You can also finish them under the broiler for extra crispiness.
Can I air fry these wings?
Definitely! Preheat your air fryer to 200°C (400°F), arrange the wings in a single layer, and cook for 20-25 minutes, flipping halfway through.
How should I store leftovers?
Store any leftover wings in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer to keep them crispy.
What are some good dipping sauces for spicy wings?
Classic choices include blue cheese or ranch dressing, cooling yogurt dips, or even a sweet chili sauce to balance the heat.
Can I freeze marinated chicken wings?
Yes! You can freeze the wings right after marinating. When ready to cook, thaw them in the refrigerator overnight and bake as directed.
