Ingredients:


- 200g tortilla chips

- 200g grated mature Cheddar cheese

- 250g minced beef

- 1 small onion, finely chopped

- 2 garlic cloves, minced

- 1 tsp smoked paprika

- 1 tsp ground cumin

- 1 tsp chilli powder

- 400g tin chopped tomatoes

- 150g black beans, drained and rinsed

- 1 large tomato, diced

- 1 small red onion, finely chopped

- 1 green chilli, sliced (optional)

- 1 ripe avocado

- Juice of 1 lime

- Small handful fresh coriander, chopped

- 100ml soured cream

- Salt and pepper, to taste

- Olive oil, for frying


Method:

1. Preheat your oven to 200°C (180°C fan)/Gas Mark 6.

2. Heat a little olive oil in a frying pan and sauté the onion for 2-3 minutes until soft. Add the garlic and cook for a further minute.

3. Stir in the minced beef, breaking it up with a spoon, and cook until browned. Add the smoked paprika, cumin, chilli powder, and a pinch of salt and pepper. Cook for another minute.

4. Pour in the chopped tomatoes and simmer for 10 minutes, then stir in the black beans and simmer for a further 2 minutes. Remove from the heat.

5. In a bowl, mash the avocado with lime juice, half the coriander, and a little salt to make a quick guacamole.

6. On a large ovenproof platter or baking tray, spread out half the tortilla chips. Spoon over half the beef mixture and sprinkle with half the cheese. Repeat with the remaining chips, beef, and cheese.

7. Bake in the oven for 8–10 minutes, or until the cheese is melted and bubbly.

8. Remove from the oven and scatter over the diced tomato, red onion, green chilli, and remaining coriander. Dollop with guacamole and soured cream.
