Ingredients:


  • 4 ripe tomatoes, diced

  • 1 small red onion, finely chopped

  • 1–2 fresh jalapeño chillies, de-seeded and finely chopped (adjust to taste)

  • 1 clove of garlic, minced

  • A small handful of fresh coriander leaves, chopped

  • Juice of 1 lime

  • ½ teaspoon sea salt (or to taste)

  • Freshly ground black pepper, to taste

  • Optional: ½ teaspoon ground cumin

  • Optional: 1 small ripe avocado, diced (for extra creaminess)


Method:


  1. Prepare the Vegetables:

    Place the diced tomatoes in a medium-sized bowl. Add the finely chopped red onion, jalapeño, and garlic.
