  • 1 teaspoon ground coriander

  • 1 teaspoon ground cumin

  • 1 teaspoon turmeric

  • 1 teaspoon garam masala

  • ½ teaspoon ground cinnamon

  • 200ml coconut milk

  • 70g (Small tub) of tomato passata or purée

  • 1 tablespoon natural yoghurt

  • 1 large carrot, diced

  • 1 large potato, diced

  • 1 cup cauliflower florets

  • 1 cup green beans, chopped

  • ½ cup frozen peas

  • 50g cashew nuts (optional)

  • plus a handful of sultanas (optional)

  • Salt and pepper, to taste

  • Fresh coriander leaves, for garnish

1. Heat the oil in a large pan over medium heat. Add the onion and cook until soft and golden.

2. Stir in the garlic, ginger, and green chilli, cooking for a further minute until fragrant.

3. Add all the spices: coriander, cumin, turmeric, garam masala, and cinnamon. Cook, stirring, for 1-2 minutes to release their flavours.

4. Pour in the coconut milk, tomato passata, and yoghurt. Mix well.

5. Add the chopped vegetables and cashew and sultanas nuts. Season with salt and pepper.

6. Cover and simmer gently for 20-25 minutes, or until the vegetables are tender and the sauce is thick and creamy.

7. Stir in the peas and cook for another 5 minutes.

8. Garnish with fresh coriander leaves and serve hot with steamed basmati rice or warm naan bread.
