  • 1-2 tablespoons of good butter

  • 2 medium-sized onions, finely chopped

  • 1 clove of garlic, peeled and crushed

  • ½ teaspoon of ginger pulp

  • 2 whole green chillies (Optional)

  • ½ teaspoon ground turmeric

  • ½ teaspoon chilli powder

  • 1 teaspoon ground coriander

  • 1 teaspoon ground cumin

  • 1 teaspoon salt or to taste

  • 225g/8oz whole button mushrooms,

  • a handful of Cherry tomatoes

  • ½ - 1 ladle of basic curry gravy

  1. To begin crafting your Mushroom Bhuna, gently melt the butter in a pan over medium-low heat. Add the chopped onions along with the salt, then cover the pan with a lid to help draw out the moisture from the onions. Stir occasionally to prevent them from burning. This bhuna method will beautifully caramelize the onions, enhancing their sweetness and creating a rich, flavourful base for your dish.

  2. Next, introduce the button mushrooms to the pan and apply the same technique to draw out their moisture. You'll be amazed by the amount of water they release! Keeping the lid on is essential for this step. As the moisture evaporates, the mushrooms will begin to caramelize, contributing a wonderful sweet, earthy flavour to your dish—exactly what we aim for. This method is also fantastic for cooking plain mushrooms that can complement any meal beautifully!

  3. Once the mushrooms have caramelized to perfection, add the minced garlic and ginger to the pan. Sauté them for about a minute, allowing their aromatic flavours to meld and infuse into the dish, creating a delightful depth of flavour.

  4. Next, incorporate the ground spices and chilies into the pan, briefly frying them to release their aromas and enhance their flavours. Then, add the curry gravy and tomato puree, along with the cherry tomatoes, stirring everything together thoroughly to ensure a cohesive blend, and heat it all the way through for a deliciously rich sauce.

  5. Finally, finish the dish by stirring in fresh coriander leaves (or basil leaves for a different twist) along with a sprinkle of garam masala and a squirt of lemon juice for brightness. Mix well and serve.
