Nutritional values can vary based on ingredients and portion size, but on average, a 1-cup (about 200 grams) serving of Chicken Jalfrezi provides approximately 250-300 calories, 20-25 grams of protein, 10-15 grams of fat, and around 15-20 grams of carbohydrates. It also offers essential nutrients like vitamin C, vitamin A, and iron from the vegetables.


One of the key features of a good chicken jalfrezi is the texture. Unlike smoother curries, jalfrezi should have distinct layers of flavour and visible pieces of onion, peppers, tomatoes, and chillies throughout the dish. Cooking the vegetables over high heat helps develop a slightly smoky, stir-fried flavour while keeping a little bite in the peppers and onions.

I like to cook jalfrezi in a wok over a powerful stir-fry burner, which helps achieve the high heat needed for this style of curry, although a large frying pan or sauté pan will still produce excellent results at home.

I still remember sitting in a restaurant with some workmates while one of them ate a particularly fiery jalfrezi with tears running down his face. I asked him, “Is it hot?” “Yeah… bloody lovely!” he replied.

The Origins of Chicken Jalfrezi

Jalfrezi has its roots in the Indian subcontinent during the British Raj, where leftover meat was traditionally stir-fried with onions, chillies, and spices to create a fresh, flavour-packed curry. The name is believed to come from the Bengali words “jhal” meaning spicy and “frezi” meaning stir-fry.

Unlike many slower-cooked curries, jalfrezi is known for its high-heat cooking method, giving the dish its distinctive combination of smoky flavour, fresh vegetables, and bold chilli heat. Peppers, onions, tomatoes, and green chillies are typically cooked quickly so they retain texture and colour rather than melting into the sauce.

Over time, chicken jalfrezi became one of the most popular curries in British Indian restaurants, although traditional homemade versions are often lighter, fresher, and less sauce-heavy than many takeaway adaptations.



Traditional Chicken Jalfrezi Recipe


Ingredients


Chicken

  • 500g chicken breast, cut into bite-sized pieces


For the Jalfrezi Sauce

  • 4 tbsp ghee or oil

  • 3 cloves garlic, crushed

  • 1 x 400g tin chopped tomatoes

  • 4–6 fresh green chillies, roughly chopped

  • 2 tsp ground cumin

  • 2 tsp ground coriander

  • 3 tsp chilli powder

  • 1 tsp turmeric

  • 1 tsp garam masala

  • 1 tsp sea salt

  • alternately use my madras base gravy


For the Stir-Fry

  • 2 large bell peppers, cut into chunky pieces

  • 1 large onion, cut into chunky pieces

  • 1 garlic clove, thinly sliced

  • Small piece of ginger, thinly sliced

  • 6–8 whole green chillies (optional)

  • Handful of cherry tomatoes (optional)

  • Fresh coriander leaves

  • Squeeze of lemon juice

  • 1 tsp turmeric


Whole Spices for the Stir-Fry

  • 1 cinnamon stick, broken

  • 4 cardamom pods

  • 1 tsp mustard seeds



How to Make Traditional Chicken Jalfrezi

Prep all your ingredients before starting. Cut the chicken into large bite-sized pieces, measure out the spices, chop the vegetables, and prepare the garlic, ginger, and chillies.



Make the Jalfrezi Sauce

Heat the oil or ghee in a large pan over medium heat. Add the crushed garlic and chopped chillies, then fry gently until the garlic turns lightly golden and fragrant.


Add the chopped tomatoes and bring to a gentle simmer. Cook until the tomatoes soften and the oil begins to separate from the sauce, using a wooden spoon to break the tomatoes down as they cook.


Stir in the ground spices, adding a small splash of water if needed to prevent sticking. Lower the heat, cover, and simmer gently for around 10 minutes until the sauce thickens and the spices are fully cooked through.


Add the chicken pieces and stir well to coat them in the sauce. Continue cooking until the chicken is fully cooked through and tender. Set aside while you prepare the stir-fry ingredients.


Prepare the Stir-Fry

Heat 2 tbsp of oil or ghee in a wok or large frying pan until very hot. Coconut oil works particularly well for stir-frying because it handles high temperatures well.

Add the sliced ginger and garlic, followed by the cinnamon stick, cardamom pods, mustard seeds. Stir-fry for 30 seconds until fragrant.


Add the peppers, onions, whole chillies, and cherry tomatoes. Stir-fry over high heat for a few minutes until the vegetables begin to soften but still retain their characteristic jalfrezi crunch.


Pour in the prepared chicken and sauce mixture and toss everything together over the heat for 1–2 minutes.

Finish with garam masala, fresh coriander, and a squeeze of lemon juice before serving.
