You’ll need a blender for the onion, ginger, and garlic mixture. To help it blend smoothly, add a small splash of water — just enough to get it moving. If you add too much, you can always strain a little off.
When it comes to frying the blended mix, take your time.
At this stage, you’re:
Cooking off the excess water
Developing flavour
Gently caramelising the onions
This is what removes the raw onion taste and brings out a natural sweetness in the curry.
If the mixture starts to look a little dry, just add a small splash of water and continue cooking.
Once this stage is done properly, the rest of the curry is quite straightforward.

Traditional Chicken Dopiaza Recipe
Ingredients:
2 - 4 chicken breasts, one per person
4 tablespoons of ghee or coconut oil
2 large onions chunky chopped ( but separated, one to fry & one to blend )
1, 400g tin of whole or chopped tomatoes
1 teaspoon of Celtic or Himalayan salt
Ground spices:
1 inch piece of ginger ( peeled and grated)
3 to 4 cloves of garlic (crushed)
1 teaspoon of ground cumin
1 teaspoon of ground coriander
1 teaspoon of turmeric
½ - 1 teaspoon of chilli powder more if you like it hot
Whole spices:
4 cardamon pods crushed with a rolling pin
4 whole cloves
2 sticks of cinnamon broken in two
2 bay leaves
To finish the dish:
1 teaspoon of Garam Masala
Chopped Coriander leaves
How to make Chicken Dopiaza traditional method
Prepare your ingredients by chopping the onions, mixing the spices, and getting everything ready before you start cooking.
Cut the chicken into large pieces and set aside.
In a blender, combine one of the chopped onions with the ginger and garlic. Add a small splash of water and blend into a smooth paste.
Heat the oil or ghee in a pan over medium heat, then add the blended onion mixture. Cook gently until the raw smell disappears and the mixture begins to soften and sweeten.
Add the whole spices and fry gently for a minute or two until fragrant.
Increase the heat slightly and add the chicken. Fry until the pieces change colour and begin to seal on the outside.
Add the ground spices and cook for a couple of minutes, stirring well to coat the chicken.
Pour in the tinned tomatoes, breaking them up in the pan if using whole tomatoes. Add the salt, reduce the heat, cover, and simmer for 10–15 minutes until the chicken is cooked through. Add a little water if needed.
In a separate pan, fry the remaining chopped onion in a little butter or oil until golden.
Add these fried onions to the main curry and stir through.
Finish with garam masala and fresh coriander, then serve.
